So today we’re talking about my latest delicious dessert creation… a Cast-Iron Lemon Blueberry Cobbler!

To be honest I’m more of a pie/cobble girl and less of a cake girl. I like saucy cooked fruit with a little bit of crust to balance it out.
I find cobblers are easier to handle and much more forgiving when it comes to sweetness. And tastier in my opinion.
If you didn’t grow up eating grandma’s homemade berry cobbler, you might be wondering “what is cobbler?”
What is cobbler?
A muchi is a dish filled with a savory or sweet filling and topped with some type of batter, biscuit, dough or dumpling. It’s kind of like an easy free-style pie, which is how I like it. All delicious without all the work!
And to break it down further…
What is the difference between a cobbler, crumble, and crisp??
- Cobbler:A cobbler has a biscuit-like topping on top of the fruit.
- crushed:A crumble consists of a streusel topping made of flour, sugar and butter.
- crisp:A crisp is similar to a crumble but includes oats in the topping for extra crunch.

Here are the ingredients you will need to make this cobbler:
- ¼ cup salted butter
- 1 cup all-purpose flour (for a gluten-free version, use gluten-free flour)
- 2 teaspoons baking powder
- Half a teaspoon of salt
- 1 cup buttermilk
- ½ cup brown sugar, plus 2 tbsp
- Half a cup of white sugar
- Zest from a lemon
- 6 tablespoons fresh lemon juice (usually 1 ½ lemons)
- 1 teaspoon vanilla extract
- 2 cups fresh blueberries, rinsed and stems removed (about 9 ounces)
Now let’s talk about how all these elements come together…
How to make a blueberry cobbler:
Start by preheating your oven to 400 degrees Fahrenheit.

Next, mix together the flour, baking powder, and salt in a medium bowl.

Then stir in the buttermilk, ½ cup white sugar, and ½ cup brown sugar, followed by the lemon juice, lemon zest, and vanilla extract.

Now in another bowl mix together the rest of the brown sugar, lemon juice and blueberries.

Place ¼ cup butter in a 10-inch cast-iron skillet (or a 9×9 square or round baking dish), transfer it to the preheated oven to melt, and heat the pan—about 5 minutes.
Remove the hot skillet with the melted butter from the oven and pour in the batter.
Top with sugared blueberries, sprinkling evenly throughout the pan. And they save the juice for another use.
Turn the oven down to 375 degrees and bake for 30 minutes.
If you want it a little more golden, turn on the broiler for 30 seconds – be careful it can burn quickly.
Then let it cool a bit and serve this blueberry cobbler with a big scoop of vanilla ice cream!

How to save it:
Store leftovers of this blueberry cobbler recipe in an airtight container in the refrigerator for 3-4 days.
How to reheat it:
Reheat in oven at 350°F (175°C) for 10-15 minutes or until heated through. You can also microwave individual portions for about 1 minute.
Can you freeze it?
Yes, you can freeze this blueberry cobbler recipe. Wrap the baked and cooled cobbler tightly in plastic wrap and store in a freezer bag or container. Freeze for up to 3 months. Thaw in the refrigerator overnight before reheating.

instructions
- Preheat oven to 400 degrees Fahrenheit.
- Mix together the flour, baking powder and salt in a large bowl.
- Stir in buttermilk, ½ cup white sugar, ½ cup brown sugar. 4 tablespoons lemon juice, lemon zest and vanilla.
- Mix remaining 2 tablespoons brown sugar, remaining 2 tablespoons lemon juice, and blueberries as needed in small bowl or medium bowl.
- Place the butter in a 10-inch cast-iron skillet (or a 9×9 square or round baking dish) and transfer to the preheated oven to melt and heat the pan for 5 minutes. (Be careful not to let it sit too long or you may burn the butter.)
- Remove the hot skillet with the melted butter from the oven and pour in the batter. Top with the candied blueberries—scatter them evenly all over the pan. (Reserve the juice in the blueberries for a cocktail or other use.) Turn the oven down to 375 degrees and bake the cobbler for 30 minutes.
- Transfer to a baking rack to cool slightly.
- Serve with vanilla ice cream or whipped cream.
