I love making a batch and eating them for breakfast throughout the week. It’s nice to be able to enjoy a healthy meal with zero effort. Just take it out of the freezer, reheat and serve!

If you’re like me, you eat sweet potatoes this time of year.

Are sweet potatoes good for you?

Let’s take a look at some of the benefits of sweet potatoes:

  • First of all, they are super delicious!
  • They are rich in antioxidants such as vitamins C and A, which help strengthen the immune system. These vitamins are also important for healthy vision, skin, and organ function.
  • They are also rich in other healthy nutrients such as manganese, B vitamins, and minerals like potassium.
  • Sweet potatoes raise blood sugar more slowly than regular potatoes.
  • They can help regulate blood pressure.
  • They’re high in fiber and may even help with weight loss—um, sign me up twice!

Sweet potatoes are not only delicious and good for us, but they are also versatile. You can use them like regular potatoes. You can mash, bake, etc. Roast with other vegetables Even chop them up and turn them into cakes or Delicious Breakfast Skillet.

We roasted sweet potatoes for today’s recipe. Please allow me to share all the details:

How to Make Turkey Sausage Breakfast Skillet:

Start by adjusting the oven rack so that it is in the middle position, then preheat the oven to 450 degrees.

Place chopped sweet potatoes, yellow potatoes, and onions in a large mixing bowl.

Chop the sweet potatoes and Yukon gold potatoes into a large mixing bowl

Sprinkle with salt, pepper and olive oil and stir to combine.

Then place the vegetables in a single layer on the non-stick pan. Bake for 15 minutes, then (place the pan on the middle rack of the oven) switch the oven to the high broil setting and bake for 3-5 minutes. (Potatoes should be cooked through and slightly browned.)

Next, remove the baking sheet from the oven and turn the oven back to 450 degrees. Use the thin front edge of a spatula (preferably metal) to carefully loosen any potatoes stuck to the pan, then discard any potatoes and onions.

Now, make six 5-inch square wells for the eggs and sausage. Place two sausage links at the top and bottom of the hole. Sprinkle cheese and chopped parsley over potatoes and sausage.

I like to spray the egg wells with cooking spray to make sure they don’t stick together. Then gently crack the eggs into the well and bake for another 3-4 minutes for medium-plus eggs.

Keep in mind that the eggs will continue to cook on the hot pan when you take them out of the oven, so I’d rather cook them less and put them back in the oven if needed. (Also, some ovens run hotter than others – you may need more or less time in the oven during this step. So be sure to pay close attention to them during this step of the process).

How to Make a Breakfast Pan

Let the pan cool for a few minutes, cut the breakfast bread into 6 portions, and use a large spatula to carefully remove the eggs, sausage, and potato pieces from the pan. (I use a metal spatula because it’s thinner and sharper and can get into the eggs better without breaking them.)

Devour immediately or serve as breakfast throughout the week! For storage, I like to stack them in a large airtight container with a few layers of parchment paper between each egg square. That way I can take them out with parchment paper and place them on a plate to reheat or serve cold.

  • 1 pound sweet potatoes, washed and cut into ½-1 inch cubes (1 extra large sweet potato or 2 medium sweet potatoes)

  • 1 pound yellow potatoes, washed and cut into ½-1 inch cubes (2 medium potatoes)

  • 1 whole yellow onion, peeled and chopped

  • 1½ teaspoons salt

  • 1 teaspoon black pepper

  • 3 tablespoons olive oil

  • 12 precooked sausages (if frozen, thaw in the refrigerator the night before or defrost in the microwave).

  • 6 large eggs

  • 4 ounces cheddar cheese, shredded

  • 2 tablespoons grated Parmesan cheese

  • ¼ cup chopped parsley

  1. Place oven rack in middle position and preheat oven to 450F.
  2. Toss the sweet potatoes, yellow potatoes, onions, salt and pepper in the olive oil and roast on the pan for 15 minutes. Place the pan on the middle rack of the oven, switch to the high broil setting and bake for 3-5 minutes. (Potatoes should be cooked through and slightly browned.)   3. Remove the pan from the oven and turn the oven back to 450 degrees. Using the thin front edge of a spatula, carefully loosen any potatoes stuck to the pan and discard them (a metal spatula is best, but be careful as it may scratch the nonstick pan).
  4. Make 6 five-inch square holes for eggs and sausage. Place two sausage links at the top and bottom of the hole.
  5. Sprinkle cheese and chopped parsley over potatoes and sausage.
  6. Spray each well with cooking spray to make sure the eggs don’t stick. Gently crack the eggs into the well and bake for an additional 3-4 minutes for medium-plus eggs. Be sure to pay close attention to them during this step of the process (*see notes). How to Make a Breakfast Pan
  7. Allow the breakfast bake to cool for a few minutes, cut the breakfast bake into 6 portions and carefully remove the eggs, sausage and potato cubes from the pan with a large spatula. (I use the metal one because it’s thinner and sharper and can get under the egg better without breaking it. Just be aware that it may scratch your nonstick pan.)   9. To store, stack them individually in a large airtight container, separated by parchment paper. When ready to eat, simply remove them with parchment paper and place on a plate to reheat or serve cold.

notes

  • I cleaned the potatoes and kept the skins on for more nutrients and fiber.
  • The eggs will continue to cook on the hot pan even after you take them out of the oven, so I’d rather “do less”. If necessary, put them back in the oven for a minute or two until they are cooked to your liking. Also, some ovens run hotter than others – you may need more or less time in the oven when performing this step.
