When it comes to savory recipes, pineapple remains a very controversial ingredient for us to include. But while the stark contrast of flavors between sour tanginess and sweetness remains off-putting to some, that hasn’t stopped Filipino cooks from making the most of this delightful tropical fruit. Pineapple is one of the most used fruits in our cuisine, be it for dessert or main course. And so if you’re still on the fence about mixing this ingredient into your food, I’d suggest you try at least one of the Filipino dishes. Malapat or pininyahong standard, anyone?

Pininyahang Manak, as the name suggests, relies on the strong flavor of our yellow fruit to enrich a delicious chicken dish. But this hero element relies heavily on many other elements to complete it. We have the likes of garlic, carrots and bell peppers.
However, this recipe, in particular, uses more ingredients than the classic recipe, hence the term “malapat”. If, like me, you really want a thick, creamy and delicious stew, you will really like this version. We have cornstarch to provide that thickness to our sauces, while adding some liver spread for a one-of-a-kind flavor. Let’s give it a shot, shall we?
How to cook Malapat Na Pininhang Manak:
Prepare the chicken:
The same way we start many of our meals, we need to heat the cooking oil. And so you can put 4 tablespoons of it in a pan and let it heat up. Once this is done, you can add your 2 lbs. Chicken that you’ve cut into pieces to serve. Proceed to pan-fry them until the sides turn light brown. After that, take out the chicken and keep aside for now.

Now we need your chopped 1 onion, as well as your chopped 5 cloves of garlic. Fry them in oil using the same pan. Then when the chopped onions are soft, put the chicken back in the pan. Now we will pour 3 tablespoons of soy sauce inside and stir them while deglazing the leftover chicken stuck to the pan.
And then we can include 8 ounces of pineapple chunks as well as 2 cups of water. Wait for it to boil, and then you can proceed with your 1 Nor chicken cube as well. Put the cover on and then set the heat to low to medium. With this, we will cook our chicken for 25 minutes.
Adding some more seasonings and ingredients:
Let’s add 2 tbsp liver spread and 1 carrot cut crosswise. Keep this cooking with remaining ingredients for 5 minutes. And then you can also put 1 red bell pepper and 1 green bell pepper, both of which you have diced into the mixture. Add your desired amount of salt and black pepper.
And now in a separate bowl or container, mix 2 tablespoons of cornstarch with 3 tablespoons of water. Make sure they are well mixed together before pouring the mixture into your pan. Then we can stir all this smoothly until we get a sauce as thick as we want. Now just sprinkle 1 teaspoon of sugar and cook for 1 more minute. Once you are done with this, just transfer the dish to a serving plate.
And there you go! You have a satisfying tasting plate of malapat na pininiyahang standard. Just have it with some freshly made rice, and you’ve got yourself the perfect meal. But if you want to try other variations of this yummy recipe in the next few days, I have some suggestions for you.

I think it would be easier to imagine our recipe with the smooth, velvety feel of coconut milk. And if this sounds interesting to you, then you should really add pininiyahang manak sa gata to the list of dishes to cook. Coconut milk helps lighten the rich pineapple flavor a bit. This dish is really perfect when you want something with a nice array of spices and seasonings without something too strong in flavor.

Pineapple Chicken Stew with Thick Sauce.

Heat oil in a pan. Pan-fry the chicken pieces until the sides are lightly browned. Remove from chicken and set aside.

Saute the onion and garlic using the remaining oil.

Once the onions are soft, add the chicken again.

Pour in the soy sauce and stir while deglazing any leftover chicken stuck to the pan.

Add pineapple chunks and water. Let it boil.

Place the male chicken cubes. Cover the pan. Adjust heat between low to medium settings. Cook the chicken for 25 minutes.

Add liver spread and carrots. Cook for 5 minutes.

Add bell pepper. Season with salt and black pepper.

Mix cornstarch with 3 tablespoons of water. Mix well and then pour into the pan. Stir until the sauce reaches your desired consistency.

Add sugar. Cook for one minute.

Transfer to a serving plate. Serve hot with rice.
